Been spending a lot of time in the kitchen lately on my "quest" for healthy eating. Here are some I came up with. Bear in mind though, I am no cook and I rarely follow recipes.
My version of the Skinny Alfredo but I used whatever pasta I had. Pasta with shredded chicken breast mushroom and spinach - no heavy cream, just milk, chicken broth, cheese.
Quinoa with salted egg and tomato. Yummy breakfast.
Spinach, mushroom, turkey breast and bell pepper fritattas.
Stir-fried left over chicken (shredded) with broccoli, zucchini, bell peppers.
Baked sweet potato.
